Lemon Heaven!



I am definitely on sugar overload after making those lemon cupcakes! I must say I was quite the lemon fairy delivering those to my dad and than the extras were distributed to friends! (I myself had eaten more than my share of the frosting!)

But... back to important stuff - here is the recipe for these yummy lemon delights! They make a full 24 cupcakes that are filled to the top.

Lemon Cupcakes:
1 package lemon cake mix
1 package lemon instant pudding
1 C sour cream
3/4 C water
3/4 C oil
4 eggs

Mix first two ingredients and than add wet ingredients. Mix with an electric mixer on medium speed for about two minutes. The batter is thick so a good mixer or a kitchenaid work best!. Fill the cupcakes and bake them at 350 degrees for 20 minutes.
The cupcakes may fall once they come out of the oven but no problem as the frosting will fill in the indentation of the cupcake!

Lemon Frosting:
2 sticks of butter, very soft
6-7 C powdered sugar
1/2 C fresh lemon juice
1 teaspoon grated lemon zest

Place the butter in a large mixing bowl. Add 4 cups of sugar, then the juice and the zest. Beat until smooth and creamy. Gradually add the remaining sugar, 1 cup at a time, until icing is thick enough to be of good spreading consistency (I added 6 cups). Use and store at room temperature.

Garnish with berries (optional)

My dad seemed to really like them a lot and so did some other people.

We met the Trainas and the Jeromes at the pool and I brought cupcakes to them as well.

Oops....somebody found a cupcake!
