Can we make cookies for my teacher?

When I went to pick up Parker from preschool yesterday, his teacher was sick and so he asked me if we could make cookies for him. Well, what turned out from "cookies for Mr. Joe" became cookies for everyone I could think of that I would be seeing in the next couple of days. I made my mother-in-law's yummy coconut oatmeal cookies and I baked about five dozen of these yummies! They are seriously delish and don't even get me started on the cookie dough!




Oatmeal Coconut Cookies
1 1/2 C. Sugar
1 1/2 C. brown sugar
1 1/2 C. Crisco
1 tsp. salt
3 tsp. vanilla
3 eggs
1 1/2 tsp. baking soda
3 tsp. baking powder
3 C. flour
1 1/2 C. oatmeal
3 c. coconut
1 C. pecans Chopped finely (optional)

Directions:
In a mixing bowl, cream together sugar, brown sugar, crisco, salt, vanilla and eggs. Add in the remaining ingredients. Spoon the mixture onto a cookie sheet and bake at 350 degrees for 10-13 minutes.
Enjoy!

Good mom! You are like me...if you're going to bake, bake A LOT & share the love. I'm not sure if my neighbors are cursing me or love me for the treats that show up on their doorsteps.

I mean, not that *I* think that you are...but, someone might...

Wish you guys lived closer, or maybe my thighs are glad that you don't--with all the yummy stuff you bake. :)
